Pat LaFrieda is an old-school do-it-yourselfer, a formidable trait that bleeds into his cooking. He is precise and foolproof in his methodology.

We’ve sat down with LaFrieda multiple times to discuss, among other things, the finer points of meat preparation and grilling. We like to think we’ve gleaned a thing or two. Ever the students, here’s what we’ve learned from the meat man himself.

Rule number one? A good steak, as any cook worth their salt might contest, is already so rich in flavor that very little needs to be done in the way of preparation and seasoning. Other tidbits? High heat is essential. A thermometer, unless your very vocation is grilling steaks day-in, day-out, is a very good idea. Have a resting rack ready. And for the sake of all things good and decent in the wide, wonderful world of meat: Do not jab your steak with a fork to judge whether it’s cooked to your liking.

Some meat enthusiasts believe in bringing a steak up to room temperature before tossing it on the grill. Now, as a meat purveyor, Pat LaFrieda is not exactly encouraged by the FDA to invite the associated bacteria to the party, but he claims it’s pointless to leave a steak out.

How do you prepare the perfect medium-rare steak? “Straight from the fridge at 38 degrees [Fahrenheit], douse it in salt.” If you’re cooking with an overhead oven, “Lower the grate down from heat (on high), and cook it for about three minutes on each side, if you’re cooking, say, a 1.5-inch porterhouse. Once finished, pepper it.” Some say that peppering your steak ahead of cooking will cause it to burn and impart a bitter taste.

As for guesstimating the doneness of your steak? Probably not the best move for most of us. “This whole thing about ‘If you touch it and it feels like your cheek,’ I never got that,” LaFrieda says. “Stick a thermometer in the center where it’s toughest and where the bone is. If it’s 125 [degrees Fahrenheit], I’m taking it out. If you rest it for more than 2 minutes, then it’s going to continue to cook through.”

And when you pull that steak out? Get it on a resting rack. “You don’t want the meat to rest in its own juices. Whatever’s going to fall, let it fall.” Otherwise, he tells us, “You’re now steaming the steak again – what we’ve worked so hard to do, and now we’re going to lose it. Let it sit for two minutes on the rack, then make sure you cut into it and stop the heating process.”

It just doesn’t get much better. Pro tip: If you plan to save and reheat your steak, leave it a little less than medium rare so it won’t overcook the second time around.

“Slice it at 2 minutes and the cooking procedure ends. The moment you cut through a steak, the resting period is over. No juices get redistributed through the product. The exterior temperatures are equaling the interior temperatures. That’s just physics. This gets you a nice sear and one solid color throughout.”

As for the right knife? A meat slicing knife works, but LaFrieda prefers a butcher’s knife to get the job done. Pat’s brand of choice is Victorinox.

Serving

Once you’ve sliced your steak, or let it rest as long as you’d like, it’s time to add fresh-ground pepper, if you want it. Then there’s really only one question left: To use sauce, or not to use sauce? “I love sauces,” LaFrieda says. “They bring a different dimension to something that I’ve eaten most likely plain for most of my life.”

His favorite sauces? “Mine. It’s a little sweet, and it’s got a lot of reduced balsamic and sautéed Vidalia onions, which you can use as a marinade. If you just use it for steaks, a little bit goes a long way because it has that potency of the balsamic and the sweet Vidalia. My whole life I’ve been eating steak au poivre from Raoul’s.”

On reheating leftovers

If you’re going to have leftovers, “Make sure the meat is very rare, to begin with,” LaFrieda implores. “If you’re going to make a whole fillet and you know you’ll only eat a few slices, make sure you refrigerate the rarest parts so when you reheat it, it’s not overcooked. And keep it out of the microwave for crying out loud. Stovetop.”

Taking screenshots isn’t only easy – it’s incredibly useful. From forwarding text message conversations to saving receipts, saving photos on your iPad routinely comes in handy.

There are two ways to take screenshots on an iPad: using the physical buttons, or using the digital AssistiveTouch function. Here’s how to do both on any iPad.

How to take a screenshot on an iPad

To take a screenshot on your iPad, press the Home button and Power button at the same time.

If your iPad doesn’t have a Home button, press the Power button and the Volume Up button. Only a few iPad generations lack a Home button: the 2018 and 2020 iPad Pros, and the 2020 iPad Air.

When you take a screenshot on your iPad, the screen will flash and a preview of your screenshot will appear in the bottom corner. Once the preview slides away, your screenshot will be saved. You can find it in the Photos app.

Take a screenshot on your iPad without pressing buttons

If you don’t want to take a screenshot by pressing two buttons at once, you might want to try AssistiveTouch. This accessibility feature puts a button on your screen that you can use to perform multiple tasks, like taking screenshots.

To turn on AssistiveTouch, open your iPad’s Settings app and tap “Accessibility.” On the Accessibility page, tap “Touch” and then “AssistiveTouch.”

Turn AssistiveTouch on by flipping its switch at the top of the screen. Now, you’ll want to set up the screenshot function.

How to use Spotify on your Apple Watch to play music or control playback

As long as you have Spotify installed on your iPhone, you can listen through your Apple Watch.

  • You can play Spotify on your Apple Watch by installing the Spotify app and launching it.
  • Once you start playing Spotify music, you can listen from your Apple Watch or iPhone.

Spotify has apps on nearly every internet-connected device. This includes the Apple Watch, which lets you listen to music right on your wrist.

Here’s how to get Spotify on your Apple Watch, and use it to listen to music.

Install Spotify on Apple Watch

Before anything, make sure that Spotify is downloaded on your iPhone, and that you’re logged in.

1. Open the Watch app on your iPhone.

2. Under the “Installed on Apple Watch” heading in the My Watch section, make sure that Spotify is there.

3. If it’s not, you can install it by scrolling down to “Available Apps” and tapping on the “Install” button that appears to the right of Spotify.

Play Spotify music on Apple Watch

Once Spotify is installed on your watch, you can launch it at any time by tapping the app’s icon on your Apple Watch’s home screen. In addition, playing music from the Spotify app on your iPhone will usually auto-launch it on your Watch.

By default, you’ll see the title and artist of whatever song you’re listening to and the player controls, but you can swipe left or right to browse your playlists or individual songs, respectively.

You can access basic playback controls from your Watch.

Anything you play will start playing on your iPhone. You can press the devices icon underneath the player controls to pick another device to stream on – including your Apple Watch if you have headphones connected. You can’t play music through your Apple Watch’s speakers.

There’s also no way to play Spotify on your Apple Watch offline. You can play it while you’re away from your iPhone, but you’ll still need to be connected to Wi-Fi or LTE internet.

How to record the screen on an Android phone and edit your screen recording

In the past, if you wanted to make a screen recording on your Android, you’d need to either download a third-party app or hope that your phone’s manufacturer included one.

Now, however, all new Android phones have a screen recorder built-in. It’s easy to find and use to record nearly any app – there are some exceptions for apps like Netflix, which will just give you a black screen.

How to screen record on an Android phone

1. The Screen Recorder is found in the notification panel, so swipe down from the top of the screen – then swipe again so you can see the Quick Settings.

2. The Screen Recorder icon probably won’t be here if this is your first time using it, so tap the Customize icon (shaped like a pencil) and then drag the Screen Recorder icon from the bottom of the screen to the top, so it appears in the Quick Settings. Then tap the arrow to exit.

3. Swipe down from the top twice to see the Quick Settings and tap the new “Screen Record” icon.

Finding and editing your screen recording on Android

After your recording is complete, you’ll find it in whatever your phone’s default camera roll is – on most phones, this will be Google Photos.

1. Start the Google Photos app on your phone.

2. Tap “Photos” in the toolbar at the bottom of the screen.

3. The screen recording should be in the Today section.

You can use Google Photos to edit your screen recording as well – you can trim the start and end of the video to eliminate unwanted bits at either end of the video.

2. Tap the edit icon at the bottom of the screen. It’s in the middle, between the Share and Trash icons.

3. At the bottom of the screen, drag the bar on the left of the video timeline toward the right. This trims away the start of the video. Find the spot you want the video to begin, and then repeat that process for the bar on the right side to shorten the end of the video.

  • To screen record on an iPhone, enable the recording feature and select it in the Control Center.
  • All your screen recordings will be saved to the Photos app, where you can edit or share them freely.

Taking a screenshot – a single still image of your iPhone’s screen – is pretty easy. And luckily, taking a screen recording – a video of your iPhone’s screen – is just as easy, once you know how to enable it.

Here’s how to screen record on your iPhone, and then find the video once it’s saved.

Enabling screen recordings on your iPhone

Before you can record your screen, you’ll need to turn on the screen recording feature.

1. Open the Settings app and then tap “Control Center.” Tap “Customize Controls.”

2. Find “Screen Recording.” If it isn’t already in the section labeled “Include,” tap the green plus sign next to it. You should see it move to the “Include” section.

If you ever want to disable screen recording again, just return to this screen and tap the red minus sign next to it.

How to screen record on your iPhone

Once you’ve turned the feature on, taking a screen recording is as easy as pressing a button.

1. Open your iPhone’s Control Center by swiping down from the top-right corner of the screen – or, if you have an iPhone with a home button, swipe up from the bottom of the screen.

2. Tap the “Record” button.

3. After a three second countdown, the Record button will turn red and it will record everything you do, even if you close the Control Center. You’ll know you’re still recording because the time, shown in the upper left corner, will be red.

5. To stop recording, tap the red time indicator at the top left of the screen and then tap “Stop.” You can also open the Control Center and tap the record button again.

Finding and editing your iPhone screen recording

Your new recording will appear in the Camera Roll. To see it, open the Photos app and it should be the newest item. From here, you can share or edit it like any other photo or video.

If you’re a perfectionist, you might want to trim the start or end of your video. You can edit the video and save it as a new clip – it won’t affect the original video, but will give you an edited version you can share.

1. Find the video in the Photos app and tap it.

2. Tap “Edit.”

3. At the bottom of the screen, tap and drag the arrow at the very start of the video to the right. It will become a yellow frame.

4. Size the frame to trim the video down to just the part you want to keep. You can press play at any time to ensure you like the edit.

I paid $150 to try the popular weight-loss app backed by investors like Tony Xu and Scooter Braun. It taught me better eating habits, but keeping the weight off was harder than expected.

Like many people, I’ve been losing and gaining the same 10 pounds every few years.

In my latest attempt to lose weight, I turned to the Noom app. The TV and Facebook ads feature statements like, “Just 10 minutes a day keeps the weight off” and testimonials from people who claim they worked out every day for a year and only lost 10 pounds, but with Noom they lost 30 pounds.

Noom promises to be life-changing, easy to follow, and different from other weight-loss plans. For instance, on Noom, no food is forbidden, and its ads reinforce this concept by showing a woman grabbing a brownie while the scale flips to a lower and lower weight.

Although it seems like Noom is a newcomer to the weight-loss game, the company was founded more than a decade ago, in 2008, by two best friends, Saeju Jeong and Artem Petakov.

Last year, the company reported it had over 45 million users. A 2016 study published in Scientific Reports found that about 78% of the 35,921 participants who used Noom lost weight over an 18-month period, and a 2017 study published in the Journal of Health Communications found that Noom appeared to help people lose weight over a six-month period.

In 2019, Noom raised $58 million, with investors including Sequoia Capital, Groupe Arnault’s tech arm Aglaé Ventures, Jan Koum, cofounder of WhatsApp, Tony Xu, cofounder of DoorDash, Josh Kushner, cofounder of Oscar Health, Scooter Braun, founder of SB Projects, and Samsung Ventures. It’s now the largest venture-backed digital weight-loss startup, having raised $115 million to date, a company spokesperson told Insider’s Patricia Kelly Yeo in April.

I signed up in October 2019. It cost about $150 to test out for eight months.

After completing a short quiz about my weight, height, desired weight-loss goal, and daily eating and exercise habits, I received my “customized” plan with a budget of 1,200 calories a day – a standard recommendation for women trying to shed a few pounds.

Noom broke my 1,200-calorie budget into three categories:

  • Green – essentially vegetables and fruits, to be eaten generously
  • Yellow – multigrain bread, lean proteins, beans, and brown rice, to be eaten in moderation
  • Red – the brownie in the ad, cheeses, pizza, anything fried, all to be eaten sparingly

Essentially, the food budget encourages participants to eat more protein, fruits, and vegetables and fewer fats and processed foods.

Other key daily aspects of Noom included recording your weight, tracking your food intake and exercise, drinking at least nine cups of water, and spending 10 minutes completing interactive readings and quizzes about food and cravings on the app.

One of your first assignments is to declare your “Super Goal” and “Ultimate Why” for losing weight, then envision how your life will be different once you reach your goal.

I imagine that this is a powerful exercise for someone who has more than 10 pounds to lose.

In fact, I’ve noticed that the people who have the most weight to lose have the most success with Noom. But it felt strange to me because, while 10 pounds would help me feel more confident, it probably wouldn’t be life-changing for me.

I’m in a Facebook group for Noom users that I joined in January 2020, and the transformational photos people post constantly amaze me. It’s not uncommon to see photos of people who have lost 100 pounds or more. Most people post about their successes and their challenges, particularly when they find the scale is creeping up. But I was more of a lurker than a poster or commenter.

I started Noom before the COVID-19 pandemic, when I thought we’d be going to two weddings and my daughter’s high school graduation in 2020, so losing 10 pounds for these events were my Big Why. Then the pandemic hit and my Big Why became my desire to not gain 20 pounds during lockdown.

Initially, I found the daily readings and quizzes really insightful.

Everything is written in easy-to-digest blurbs and based on science and psychology. There are daily quizzes to help you retain the information and opportunities to read and reflect, and then add your own thoughts and experiences.

For instance, a lesson on stress eating ends with two questions: “What is your stressor?” and “What is your stress response?”

The app invites you to list all the possible ways in which you can prevent yourself from stress eating. My list of ways to intervene included taking deep breaths, going for a quick walk, drinking a big glass of water, and calling or texting a friend. I can honestly say that none of these methods have worked for me.

There’s also a lot of emphasis on mindful eating, including how to assess how hungry you are before you start eating, ways to slow down your meal, and how to tell when you’re full.

Noom also arms you with ways to handle social situations and family members who expect you to clean your plate.

For instance, the app explains why we tend to eat more when we’re out to dinner with friends and why we might arrive at the restaurant determined to order a salad but then change to a burger when everyone else at the table orders one.

And, if your mother, grandmother, or aunt insists that you eat the special meal they made for your visit, Noom has a great list of responses like “I can’t make it work in my plan,” and “Me and [insert food] aren’t on speaking terms.”

Despite what the ads say, Noom also emphasizes exercise.

There’s an initial goal to walk 3,000 steps a day, and after a week you’re encouraged to walk 10,000 steps each day and to add yoga, weights, and other workouts.

Noom pairs every participant with a goal specialist, who checks in with you every week. Each week you set a new goal – such as eating a new vegetable with every meal or exercising four times a week – and then the goal specialist checks to see if you succeeded.

If you didn’t, the specialist asks you open-ended questions that are similar to the reflections in the readings about what you could have done more of or differently.

Those open-ended questions definitely got on my nerves. Like most dieters, I know what I need to do – I just don’t always follow through.

It’s true that no food is off limits. However, losing weight wasn’t as easy as Noom promised.

One of the best lessons I learned is I can eat anything I want in moderation, and just because I gave into my craving for a bag of potato chips at lunch doesn’t mean I should give myself permission to eat an entire pizza and then a pint of ice cream for dinner.

How to assess your hunger.

I was on Noom for eight months and lost seven pounds. About three months after I went off Noom, I gained a few pounds back, so I decided to go back on Noom, hoping to lose six more pounds (the three pounds I’d regained and the three pounds I didn’t lose the first time) but nothing happened the second time I joined – I didn’t gain weight and I didn’t lose any either.

I asked health and fitness coach and weight-loss specialist Candice McDaniel why I was struggling to lose six pounds when I see photos of people who have dropped 100 pounds.

“Losing 10 pounds on a diet plan versus losing 50 to 100 pounds is harder because of how close you already are to a healthy weight,” she said. “When you have 50 to 100 pounds to lose, you don’t need to make very many changes to your diet to start seeing results. Typically at that weight, you can try following a diet plan, and even if you aren’t perfect, you’ll start seeing progress quickly. But people who only have about 10 pounds to lose have to be a lot more vigilant and follow the program very closely to see results.”

While I no longer use Noom, I’ve managed to keep off four of the seven pounds I lost and retained many of the healthy habits I learned.

For instance, I have a fruit or vegetables with every meal, I don’t eat when I’m bored (though I do still eat when I’m stressed), I exercise every day, I write down everything I eat each day, and if I slip up and have a bag of chips or a slice of cake at lunch, I don’t go whole hog in the evening. Now if I could only lose five more pounds …
